A Cut Above: Kim’s Butcher Block honors family legacy and local pride

LANETT — Kim’s Butcher Block in Lanett specializes in American-sourced meats, offering customers fresh, hand-cut options and a hometown shopping experience.
“We have pretty much anything that you can think of,” said owner Kimberly Fawley. “A lot of people are wanting to get beef tallow to make their own [skincare products]. I can order the beef fat so they can actually render it down. And it’s mainly just the fat — I ordered a girl a case of cow femur bones so that she can make bone marrow and use the bones for bone broth.”
Fawley said she knows exactly where in the U.S. her products come from — and she is proud to sell American meat and offer premium service.
“My prime cuts come out of Colorado, my choice cuts come out of Nebraska, all my pork is coming out of Kansas and my birds — they just switched over from Dothan, Alabama, to Georgia,” she said. “I know where [everything we sell] comes from. We’ve [received a] 100 every single time on our health inspections — we just do really good. We also have the black and the red hoop cheese that you used to get back in the day — we actually carry it in stock all the time… I’m a Reagan baby, ‘Buy American, made by Americans and sold by Americans.’ And so, I really do love the opportunity to be able to say what we have here — we know where it comes from.”
Through buying American products at a local business, Fawley said customers are supporting their local and national economy.
“Buying American meat means putting the money back into the country that you’re in,” she said. “I love the fact that when you buy American, and you buy local, you’re making a difference in that community right there. And it makes a big difference for me — it’s the difference between keeping the doors open or shutting them down. Just the opportunity to have the community support that I have — it’s wonderful.”
Thanks to the community, Fawley said she is able to give back locally and continue to offer fresh, American meat for customers.
“We have a tremendous response from the community — with us being a very small hometown market — our community really supports us,” she said. “I can put stuff on sale — I post some sort of sale every single day. Everything [is cut] fresh to order. We do fundraisers — and we have been the supplier for the steaks for the girls’ youth ranch for six years — we’re so proud of everything that they do out there. So we do a lot to help them out to make sure that they’re getting as much money as they possibly can when they do their fundraisers.”
Through owning Kim’s Butcher Block, Fawley said she has grown a closer connection to her customers in the community, and she said when people shop locally, they are supporting local families — like hers.
“Being a single owner, [community support] means the world, it [allows] me to be able to have something that’s left after my dad has passed away,” she said. “That’s something that I get to say I did with my dad, and it’s been in our family for almost 20 years now, here in this one little spot. It’s such a blessing to be able to get to see our customers come in.”
Fawley said through the help of her dad, Roy “Pop” Fawley Sr. — and her brother, Roy Fawley Jr., the growth and impact of Kim’s Butcher Block is possible.
“I think my dad was really, really awesome — my dad saw stuff that other people didn’t see,” she said. “I think my dad knew that my brother needed this at that time, and I think he knew that [through owning Kim’s Butcher Block] I would be able to raise the children financially. And my brother has stood behind me 200%, the entire time I’ve had the business.”
